Crunchy Garden Pickles with Pimento Cheese

Ingredients- Pickles
• 6 c. garden veggie blend, Preferred Fresh Cuts
• 3 cloves garlic, smashed
• 2 c. white vinegar
• 2 c. water
• 2 tb salt
• 1 tb sugar
• 2 tsp mustard seed
• 1 tsp black peppercorns
• ½ tsp crushed red pepper
Ingredients- Pimento Cheese
• 1 lb sharp yellow cheddar, grated
• ¾ c. mayo
• ½ c. diced roasted red peppers, patted dry
• 1 tsp hot sauce
• 1 tsp Worcestershire
• 1 tb white vinegar
• salt & pepper, to taste.
Directions
For the pimento cheese, fold all ingredients together and season to taste. For the pickled vegetables, in a saucepan, combine the vinegar through the pepper flake and bring to a boil- stir until the sugar and salt are dissolved. Pour the hot liquid over the pickling vegetables until they are completely submerged and allow to cool to room temp. Cover and store- allow to marinate at least 24 hours before serving
Yields approximately 6 cups Pickles, 4 cups Pimento C
