Root Veggie Fries with Lemon Aioli

Ingredients

  • 5 lb root veggie fries - Preferred SPEC VE #05538

  • ½ c. canola/olive oil blend – St. Lucia VE #35229

  • 1 tb kosher salt – Diamond VE #66782

  • 1 tb black pepper – Packer VE #67682

  • 1 tb paprika – McCormick VE #71912

  • ¼ c. chopped parsley – Western VE #07185

  • 2 ea. lemon – Pro Act VE #01385

  • 2 c. garlic aioli – Ken’s VE #37270

Directions

  1. Preheat oven to 450 F.

  2. Toss root veggies with oil, salt, pepper, paprika and parsley- spread on a parchment lined sheet tray into one layer.

  3. Roast, stirring once halfway through, for approx. 30 minutes.

  4. While they are roasting, juice lemon into garlic mayo.

  5. Serve each portion of fries immediately with 2 oz of lemon aioli and season lightly with a pinch of salt and freshly cracked pepper.
